Andrea has been baking sourdough since 1999. The dough is slow fermented, the flour is locally grown, and the pizza comes out the way it does back home.

this town

Andrea did his first sourdough course in 1999, but it was Lismore where he started baking properly. In 2010 he built a wood-fired oven on a trailer and took it around the district, which is more or less where the local pop-up and food truck scene started.

He grew up in a family of publicans and cooks, with a grandmother who ran the kitchen. The recipes here are hers and his, made with a sourdough culture and sustainable, locally grown flours. After Dirtys went under in the 2022 flood, Emily and Andrea opened up at the village shops in Goonellabah. This is the only place in Lismore doing traditional Italian pizza.
